Easy to make and delicious to eat, these dairy recipes are sure to please.

Chanukah is a time to get together and share quality time with family and friends. Chanukah parties are a highlight of the holiday for Jews of all ages. Serving dairy at Chanukah parties has become customary for many. Make an unforgettable celebration by serving delicious mouth watering dairy dishes that all will enjoy!

Stuffed Jumbo Shells
1 box jumbo pasta shells
4 quarts water
1 tsp. salt
3 tsp. oil

Filling
1 lb farmer cheese
1 lb shredded cheese
1 egg

Sauce
16 oz. tomato sauce
2 T brown sugar
2 T lemon juice
dash of oregano
dash of garlic powder

Directions
Bring water to a boil. Add salt, oil and pasta. Cook for 8-10 minutes. Drain well. Combine ingredients for filling. Place 1 tsp. of filling into each shell. Arrange seam down in 9x13 pan. Combine ingredients for sauce. Pour over shells. Bake covered at 375 degrees for 30 minutes.

Cheese Kugel
1 bag medium size noodles
1 stick margarine
1 cup sour cream
1 lb cottage cheese
4 eggs
1 tsp. vanilla sugar
1 cup sugar

Directions
Cook and drain noodles well according to package directions. Add a stick of margarine and let it melt. Add the rest of the ingredients. Sprinkle with cinnamon. Bake at 350 degrees for about an hour or until golden.

Cheese Latkas
3 eggs
1 cup milk
1 cup cottage cheese
11/2 cups flour
1 tsp. salt
5 T sugar
1 tsp. vanilla extract
1/2 cup oil for frying

Directions
Mix all ingredients in a large bowl except for the oil. Heat oil and using a large spoon drop the batter in the hot oil. Fry about 2-3 minutes on each side until golden. Serve with applesauce recipe below.

Applesauce
9 Golden Delicious apples chopped
3 T lemon juice
11/2 T honey
2 T water
1/2 tsp. ground cinnamon

Directions
In a 4 quart sauce pan combine ingredients and cook on medium-low flame. Stir frequently for 20-30 minutes or until apples are tender. Transfer to large bowl, mash, cover and chill.

Noodles with Creamed Broccoli Sauce
12 oz wide noodles
1 medium onion chopped
1/2 cup margarine
2 cups chopped broccoli
1-2 garlic cloves minced
2 T chopped parsley
1/2 tsp. salt
1/2 tsp. oregano
3 T flour
3/4 cup milk
2 cups cottage cheese
1/4 mozzarella cheese grated

Directions
Cook, drain, and rinse noodles. Saute onions in margarine until soft. Add broccoli. Cook until tender but firm. Add spices. Stir in flour, add milk, mixing thoroughly. Add cottage cheese, and simmer uncovered for 5 minutes until smooth. Add noodles and cheese and cook for 2-3 minutes.

Best Roll Out Sugar Cookies
11/2 cups butter softened
2 cups sugar
1 tsp. vanilla extract
5 cups flour
4 eggs
2 tsp. baking powder
1 tsp. salt

Directions
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla extract. Stir in flour, baking powder, and salt. Cover and chill at least 1 hour. Preheat oven to 400 degrees F. Roll out dough on floured surface 1/4 inch thick. Cut into desired shapes using cookie cutters. Use dreidle, menorah, candle, coin, etc. cookie cutters for Chanukah. Place cookies 1 inch apart on a cookie sheet. Bake 6-8 minutes. Cool completely.

If desired when completely cool place half of cookie in melted chocolate and sprinkle it with colorful sprinkles.

You may also use the following frosting with a pastry bag with a small tip or a zip lock bag with a tiny hole at the tip.

Frosting
4 egg whites
4 cups sifted confectioners sugar
1 tsp. vanilla extract (or any other extract)

Directions
Mix together and put in pastry bag to completely frost the cookies or to just use for piping. You may add more confectioners sugar if the mix is too runny but it may take longer to dry on the cookie.
