Creamy, Fresh Pea Soup

Creamy, Fresh Pea SoupThis soup can be served hot or cold.

  • 1 Tbsp olive oil
  • 2 scallions, green parts only, cut into 4" lengths
  • 1 rib celery, trimmed and cut into 2" lengths
  • 1 leek well washed and cut in pieces
  • ½ med onion, finely chopped
  • 3 cups water or vegetable broth
  • 4 cups fresh peas
  • 4 peapods for garnish
  • â…“ c fresh mint leaves, extra for garnish (optional)
  • ½ cup plain Greek yogurt
  • Salt and pepper to taste

Place oil in large pot over medium high heat. Add scallions, celery, leek and onion and cook, stirring, until vegetables wilt, about 5-10 minutes.
Add liquid and bring to a boil. Add peas and simmer 10 minutes.
Puree with a blender stick or in a food processor until smooth. Add mint. Season to taste with salt and pepper. For a cold soup chill for 1 hour.
Serve with dollop of sour cream in center, and garnish with mint leaves and a peapod, if desired.

Feel free to double recipe for a bigger crowd.

Penne with Spring Vegetables

Penne with Spring VegetablesPasta is always a welcome dish favored by young and old. Adding vegetables enhances this dish as it is light and flavorful.

  • 1 c sugar snap peas, trimmed
  • 4 scallions, cut into 1" pieces
  • 1 plum tomato, cut into wedges
  • 1 cup rinsed and drained canned kidney beans
  • 2 Tbsp capers, drained
  • ¾ cup Italian dressing
  • ½ cup (2 oz) shredded Parmesan

Prepare the penne according to package directions. Add the baby carrots during the last 2 minutes of cooking. Add the asparagus and snap peas during the last 30 seconds of cooking. Rinse the cooked penne and vegetables under cold water and drain.

Combine the penne and vegetables with the scallions, tomato, beans, capers, dressing, and cheese in a serving bowl. Toss to coat well.
SERVE immediately or refrigerate for up to 24 hours. Serve at room temperature

Creamy Rice Pudding

Creamy Rice Pudding Rice pudding is one of those comfort foods that just soothes the soul. Our recipe for Creamy Rice Pudding takes this down-home dessert back-to-basics with its light vanilla flavor and creamy texture. It is the creamiest rice pudding you'll ever taste! A bit of butter and other tasty add -ins make this version unbelievably delicious!

  • (1/2 stick) butter, softened
  • 1 cup sugar
  • 4 eggs well beaten
  • 3 cups light sour cream
  • 2 cups cooked rice
  • ½ cup raisins optional
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp salt

Preheat the oven to 350 degree F. Coat a 1 ½ quart casserole dish with nonstick cooking spray. In a large bowl, cream the butter and sugar. Add the eggs one at a time and beat until well combined. Add the remaining ingredients; mix well. Pour into the casserole dish or 8 glass ramekins and bake for 20 minutes, or until the top is golden (pudding will be loose). Serve warm, or cover and chill for at least 4 hours before serving.

No-Bake Black and White Napoleon Cake

No-Bake Black and White Napoleon CakeBusy with Yom Tov preparation but want to impress your guests? Try this delicious fancy looking, no-fuss recipe that is so easy to prepare that it is sure to become a favorite!

  • 1 (4-serving size) package instant vanilla pudding prepared according to the package directions
  • 1 (12-ounce) container frozen whipped topping, thawed
  • 1 (14.4-ounce) package chocolate-flavored Graham crackers
  • 1 (16-ounce) container ready-to-spread chocolate frosting

Line a 9x13 inch baking dish with silver foil allowing foil to go one inch over the sides for easy handling.

In a medium bowl, combine prepared pudding and whipped topping. Place a single layer of graham crackers in bottom your prepared baking dish. Top with one-third of pudding mixture.

Repeat layers of graham crackers and pudding 2 more times, ending with a layer of graham crackers. Spread frosting over top, then cover and chill overnight, allowing graham crackers to soften. Cut into squares and serve.

Notes:
Black and white or white and black??? you can make it either way. So, be original try this with chocolate pudding, and white frosting. Either way it is delicious!
