Tips for Making Perfect Matzo Balls

These quick and easy tips will pay big dividends. This year, make your matzo balls deliciously perfect!

The tips in the video can be used with any recipe. However, if you’d like to include a Matzo Ball recipe, I’ve included one below:

Ingredients:

  • 6 Eggs
  • 1 cup Oil
  • 1 cup Water
  • ½ tsp Baking Powder
  • 1 pinch Salt and Pepper
  • 18 oz (or 500 gram) fine Matzo Meal

Directions:

  1. Mix all the ingredients with a fork. Adding the matzo meal gradually until the mixture is thick but not too hard. Add more matzo meal if too soft.
  2. Let harden in fridge for an hour.
  3. With wet hands form into about 60 balls and drop into boiling water or boiling soup. Boil for 15 min.

The trick to making Matzo Balls is to cook them in a covered pot.

My Matzo Balls always come out soft and delicious. Always cook them in a covered pot.

Making Matzo Balls "Lighter"

I have used a family suggestion for making delicate light matzo ball. To the eggs listed, add one (1) egg white extra lighly fluffing it up. Airate a bit not towards a merigne at all, just lightly wisk to airate, then add to the mix. Follow the directions about lightly rolling the balls with water on hands or oil if you prefer. The seltzer water seems like a novel idea. Matzo Balls so light they float out of the soup! Hope you enjoy!

hard vs. light and fluffy

My mother made the most G-d awful hard matzo balls, with of all things, a gribene inside. I looked forward to the time I would have a light fluffy one, but would you believe, my brother, a gourmet cook, loves the hard bouncy ones that my mother made, and speaks fondly of them, so you never know. Sometimes people like the hard ones too.
