Are you allowed to use a whipped cream charger on Shabbat? It involves puncturing a canister, and then gas is released into a thick cream which bubbles it up and turns it into foam.

It is better not on Shabbat, although some are lenient. The issue is that it involves transforming a thick, semi-solid cream into a more fluid, pourable state. We generally should not change the state of a material on Shabbat. This is known as “molid” – creating, and is one of the Rabbinically-forbidden acts of Shabbat (and Yom Tov).

Likewise, it is preferable not to make ice on Shabbat. Although many authorities are lenient with that, that typically involves putting an ice cube tray into the freezer on Shabbat – in which case the freezing is not actively done by the person but occurs on its own, somewhat later. By contrast, when a person operates a cream canister, the change of form occurs directly and immediately. Therefore, it is more proper to be stringent.
