It's easy to make a good tasting chicken.

In Israel we eat a lot of chicken. Mostly frozen, although there is real merit in using fresh chickens.

Chicken is a cook's delight. It's easy to make a good tasting chicken. Its distinct flavor actually requires no embellishment. A crispy broiled or roasted chicken without any seasoning tastes great. Various seasonings penetrate a chicken effectively. Ginger, salt, pepper, garlic, thyme and rosemary are good. Use a little paprika for color. Spread a little margarine or flavorful oil. It will add crispness as well as taste and color.

5-Minute Yummy Chicken

This recipe will give you the “That’s-great-can-I-have-the-recipe” response.

One chicken cut into eighths
One onion cut into 1/4 inch slices
One clove garlic chopped fine or garlic powder or equivalent
1/2 cup of ketchup
1/2 cup of brown sugar
1-tablespoon soy sauce
Salt and pepper to taste
Saute onions with garlic till translucent. Add brown sugar, ketchup, and soy sauce and simmer until sugar melts. Spread over chicken. Roast in hot oven 400 degrees F about 45 minutes.

4 Way Chicken

One chicken cut into eighths
4 tablespoons soy
4 tablespoons honey
4 tablespoons margarine
4 tablespoons fresh lemon juice

Place chicken skin side down in baking pan. Melt margarine. Add and blend soy, honey and lemon juice. Pour over chicken. Bake at 400 degrees for 25 minutes. Turn chicken over. Baste. Continue baking until finished -- 20 more minutes (depending on your oven). Baste frequently.

Apricot Chicken

One chicken cut into eighths
1/2 cup apricot jam
1/2 cup mayo
1/2 teaspoon white pepper
1-teaspoon fresh or frozen garlic

Combine last four ingredients. Smear on chicken. Bake at 400 degrees for 45 minutes covered, then 30 minutes uncovered.
