I'm a busy stay-at-home mom of four young kids, so I love quick dinner recipes. But I always found that the 'quick' recipes in a book or online were not quick enough. “Fry the onions until..” Are you kidding, I have homework to supervise! “First boil up the pasta, then...” uh, sorry, my kids are already screaming to eat!
So I created a book of really quick dinner recipes – ones that take 4 minutes or less to prepare before being thrown in the oven or onto the stovetop and forgotten about till they’re done.

HORSERADISH SALMON
- 1kg salmon
- 2 Tbsp soya sauce
- 3 Tbsp honey
- 1/2 C red horseradish
- 1,5 C lite mayo
- 2 Tbsp lemon juice
Mix all besides salmon. Spread over salmon and grill for 10 minutes.
CHUTNEY CHICKEN
- 1 chicken cut into pieces
- 1 can Coke
- 3 Tbsp apricot jelly
- 3 Tbsp chutney
- 2 Tbsp mayo
- 1 chicken stock cube
Mix all other ingredients and pour over chicken. Bake at 180C till done.
MEATLOAF
- 1kg minced meat
- 1/2 C ketchup
- 2 Tbsp non-fish based Worcester sauce
- mixed herbs
- 2 eggs
- 1C BBQ sauce
Mix all ingredients besides the BBQ sauce. Put in long oven dish and shape into loaf in centre of dish. Pour sauce over. Bake uncovered for half an hour at 180C.
FRIED EGG WRAP
- 1 wrap
- 2 eggs
- chopped tomato
- salt and pepper
- 1 tsp oil
Heat oil in pan. Put wrap in. Crack eggs onto wrap, add tomato and salt and pepper. Cover till done.
CREAMY HAKE
- 4 hake fillets
- mayo to cover fish
- onion soup powder
Coat fish with mayo and sprinkle onion powder over. Bake at 180C till done.

I love your attitude! more time with the kids, less in the kitchen. I would add: as the kids grow, bring 'em into the kitchen to help cook. My 4 boys were grateful to learn how to cook, as well as my daughters!

bag of coleslaw
Goodman's package onion soup mix - lo salt
one can of diced tomatoes- I use Hunt's no salt Add more ingredients depending on size of family...
set all night and delicious cabbage soup the nest day! Yummy
I will try some of yours too....

meatloaf tip
Real worcestershire sauce is made with anchovies and mixing meat and fish is not kosher. You can substitute with immitation worcestershire sauce that's made without the anchovies.

Can you convert your measurements into Cups, Ounces and baking degrees fahrenheit which is what we use in America.

Fried Egg Wrap: USE A CUP FIRST

I love all of these fish recipes...and like them just as much when I use tuna steak, mako shark or swordfish.

remember to buy fish free Worcester sauce! usually it has fish in, and therefore couldn't be eaten with meat (in the meatloaf recipe)
