nice message but question is off
Thank you for the very nice message, but actually the question is easy to answer. Tu BiShvat is actually the new year for fruit and not for trees! The 15th is the cut-off date for tithing fruit. If it began growing before Tu BiShvat is is tithed with last year's produce. If it began after, it belongs to next year's crop.
Trees have a different new year - for counting if a tree is in its 1st 3 years - Rosh Hashanah! See this article for a fuller explanation: http://www.aish.com/h/15sh/ho/ABCs-of-Tu-BShvat.html (as well as the first Mishna in Rosh Hashanah).
Equally important, you forgot to mention the teeth-grinding carob (bukser) we all used to get every year!
