It's mostly because of the video games themselves that are very well done

The Gameboy classics and its direct sequels have a player gather a team of creatures, either based on animals, plants or objects and then compete against other teams also with creatures (either a computer player or a real life player). The games are filled with customization from what creatures you use, what moves they use and the sequels add even more. The creatures can be cute looking, cool looking, etc. so there is a Pokemon for everyone. For instance my favorite animal is a giraffe so in the first sequel (Pokemon Gold/Silver/Crystal) there is a giraffelike Pokemon called Girafarig. The sixth generation in the series even allow you to pet the Pokemon in the game, making them more like companion animals.

I hope my explanation helps with explaining Pokemon's popularity. Watching the cartoons probably won't help you understand why they are popular and just as they say the books are better than the movie, the original source material, the video games, are better than the cartoon series/movies.
